- 1 mediumyellow onion— diced
- 2 stalksgreen onions(optional)— sliced, for garnish

- 1 tspsalt

Instructions

Heat olive oil in a large cast iron skillet over medium-high heat.

Add diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until starting to soften.

Add sliced sausage to the skillet and cook for 3-4 minutes until browned.

Add diced onion and bell pepper, cook for 3-4 minutes until softened.

Sprinkle Cajun seasoning, salt, and pepper over everything and stir to combine.

Pour in chicken broth and cook for 5-7 minutes until sweet potatoes are tender and liquid is mostly absorbed.
